Ginger-Peach Roasted Pork Tenderloin
MAKES 8 SERVINGS
- 1 ½ teaspoons seasoned salt
- 1 teaspoon ground thyme
- 2 (1-pound each) pork tenderloins
- 1 cup peach preserves
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ground ginger
- Preheat oven to 375 degrees F.
- In a small bowl, combine seasoned salt and thyme. Rub salt-thyme mixture all over pork. Set pork on a rack that is set inside a foil-lined roasting pan. Put pork in oven and roast for about 40 to 45 minutes, or until desired degree of doneness is reached.
- While pork is roasting, in a small bowl, combine preserves, Worcestershire sauce and ginger. During the last 10 minutes of cooking time, spoon the preserve mixture over pork.
- Before serving, slice pork and serve with pan juices.
