Baked Pineapple Glazed Salmon
SERVES 4
  • ¼ cup unsweetened pineapple juice
  • 2 tablespoons soy sauce
  • 1/3 cup packed brown sugar
  • 4 (6 ounces each) salmon fillets

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, whisk together pineapple juice, soy sauce and brown sugar.
  3. Set salmon fillets, skin side down, on a 15 x 10 x 1-inch foil-lined baking dish that has been greased. Brush pineapple sauce over salmon fillets.
  4. Bake, uncovered, for about 25 minutes or until fish flakes easily with a fork. While fillets bake, baste often with pan juices.
